Peach Berry Cobbler

Yum – I improvised this when I didn’t have enough of any one fruit, but really had my heart set on a cobbler.  I used fresh peaches and a frozen berry mix.  The coconut and pecan in the dough makes for a delightfully surprising crunch. 

Mix together in 2 qt. flat glass baking dish:

4 cups cut and peeled peaches

4 cups berries (raspberry, black berry and/or cherry)

¾ cup sugar

¼ cup instant tapioca

½ lime, juiced

Pinch of salt

Combine to consistency of coarse sand (using hands is best):

1 cup flour

1 cup coconut (I like the unsweetened, but either works)

¾ cup sugar

½ pecans, coarsely chopped

½ tsp baking powder

¼ tsp salt

½ cup butter, cubed

Blend in to “sand”:

1 egg

Cover top of fruit with dough.  Cook at 375º for about 45 minutes.  Serve warm with vanilla ice cream or  whipped cream.
